What does the name Vikla mean?

While on our daily walk, my husband came up with the idea of a name for my business. He said what about Vikla? The word ‘ikla’ means a meal in Maltese and the ‘v’ is for vegan or plant-based. We designed the logo to have the ‘v’ look like a tick, to depict an approved meal, because with Vikla you will be eating only plant-based meals

A bit about who we are

We prepare wholefood, plant-based nutritious and delicious meals that allow everyone to make a difference every time we eat. We also use eco-friendly compostable packaging and don’t provide single use plastics to eat your meal. You’ve got hands – use them for our delicious sandwiches (it’s more fun), and get a fork from the kitchen for our tasty poke bowls. We do everything that we can to source ingredients locally. We’re doing our part by changing the world one meal at a time.

A bit about our food

Our ingredients are sourced locally, with fresh bread baked daily. The meals are based on traditional Maltese style and the keeping in mind a Mediterranean diet.

We use Maltese names for our dishes and provide an English translation. The Maltese names are fun like for instance ‘iċ-Ċuno‘ this is to describe the alternative tuna mix, using chickpeas.

id-Dgħajsa (the boat) – A traditional Maltese stuffed loaf

The stuffed loaf was a typical meal for farmers, builders and those working outside. The loaf itself served the purpose of a container, somewhat like a bowl. The bread was hollowed and the crumb used to make ‘arjoli’ a mixture of bread crumb, tomatoes and herbs. The loaf is then filled with all sorts of ingredients found in the cupboard or fridge. Vikla’s Dgħajsa is stuffed with salad mix, oven-roasted veggies (aubergine, potato and skinned sweet peppers), bigilla (a Maltese ban paste), arjoli (a bread crumb and tomato mix), capers, olives, corn, onions and sun-dried tomatoes. All laid out on a tasty base of kunserva (tomato puree), oil and fresh-ground pepper. Topped of course with our signature fresh torn leaves of mint and basil and drizzled with our tangy herb sauce.

Coming in two sizes; iż-żgħira (small but filling), and il-kbira (large enough to share or have a second go), these tasty traditional crusty loaves are hollowed out to be stuffed with a mix of typical Maltese sandwich ingredients that take you back to your childhood at the beach.

Il-Ftira (the Maltese no nonsense sandwich)

A Ftira is a traditional Maltese to go sandwich. Butter is replaced with tomato puree and a little splash of oil and pepper. The sandwich is then filled with different pickled vegetables, olives, capers, rocket leaves, onions, sun-dried tomatoes, butter beans and bean paste. A traditional ftira usually contains tuna fish, so Vikla made two ‘ftiras’ the traditional Maltese one and the Ċuno (Choono) one. The Ċuno is filled with a chickpea mix, as a substitute to tuna.

Maltese ftira with kunserva (tomato puree), oil and fresh-ground pepper base, stuffed with bigilla (Maltese bean paste), butter beans, sun-dried tomatoes, olives, capers, pickles, onions and baby rocket leaves. Topped off with our signature fresh torn leaves of mint and basil and drizzled with our tangy herb sauce.

iċ-Ċuno ich-choono

Maltese ftira with kunserva (tomato puree), oil and fresh ground pepper base, stuffed with Vikla’s Ċuno mix (yes, it’s a plant-based alternative to tuna, and yes, it’s wholefood!) on cucumber and rocket leaves all topped off with our signature fresh torn leaves of mint and basil.

L-iskutella – (a Mediterranean style poke bowl)

Skutella is a bowl in Maltese. Here, Vikla made a type of buddha bowl or poke bowl using Mediterranean and Maltese ingredients. The base is a couscous or bulgar wheat mix, using spices and herbs for an aromatic mixture. The toppings are based on Maltese Mediterranean cuisine and Eastern Mediterranean cuisine.
